1.) Place a grill pan over low heat.

3.) In a small bowl, whisk eggs evenly and add a dash of salt and pepper.

4.) Lightly pour the olive oil into the saucepan with the egg mixture. Put in the chives and stir.

5.) Remove from heat if the egg mixture is still watery. Continue to stir for 2 minutes.

6.) To serve, set the scrambled eggs over the mushrooms.
